Welcome! This is the first time I can actually say that I am excited about this project. This has been a 2 year journey and it has been exactly that ( a journey). I am grateful to finally have a platform here in Virginia that now can harness the talents of myself and other great Culinary Enthusiasts! I am owner of Bella Soul`e Personal Chef Network which is in
its start up stage part of Promise
Enterprises LLC. I attended a Community
College in Raleigh NC as a Culinary Arts Major.
I have worked for several companies and have also worked both the Front
of the House (FOH) and the Back of the House (BOH). I have worked for the North Carolina
Hurricanes hockey team, several mid - budget restaurants such as Ruby Tuesdays
and Texas Steak house and Saloon; I have also operated as part of the opening
crew of places such as Jason’s Deli and Ted’s Montana Grill. I most favorite and owe all my success to My
former Chef and Mentor Executive Chef Michael Choung (formerly of An New World Cuisine) who now
owns Elements in Chapel Hill NC. My
chef worked with me driving me to “pay close attention to detail”. He hired me
literally off the streets! I was working
as the valet when he came out to “approve my work”. As he smoked his cigarette (which he has
given that habit up) he noticed my books that I was reading, I had grabbed my
chef coat because for some reason I had gotten cold, he simply asked “Why are
you not working in a restaurant?” I
simply stated that at that time I was denied due to lack of years of
experience. He insisted that I meet with him a few days later and upon that
time he hired me. I started as expeditor
“running food” to the tables and reading off ticket orders. I progressed quickly to fry cook , then
sauté, then I was able to help with the grill.
Before I knew it I was helping to train new employees was able to
operate at the capacity of my co- workers whom had more time and experience
with chef. I had aspired to attend
Johnson and Wales and soon got the opportunity. I’ll never forget Chef says to
me, you don’t need a piece of paper to say that you are a good chef and he was
right. Some of you may think wow that’s
crazy but he was right. Many of us know
Celebrity chefs on tv without a degree in cooking. Rachel Ray for example did not finish she
began by delivering quick foods to people.
It takes the passion, the drive, and someone to teach you basic classical
skills and you are good. I have been
cooking literally since I was 6, I have obtained and still obtaining my
certifications for my profession most importantly Food and Sanitation, soon
however, I will be a certified food manager.
I love the process of cooking and the beauty you can design on a plated
canvas. Some of you that know me know
that I have other skills but cooking is my undying love!
